  • 2 cups sparkling wine chilled, like prosecco or champagne

Method
 

  1. Combine fresh cranberries, sugar, and water in a saucepan over medium heat.
  2. Bring the mixture to a gentle simmer, allowing the cranberries to burst and release their juices, while stirring occasionally. This takes about 10 minutes and fills your kitchen with a sweet, tart aroma.
  3. Once the cranberries have burst and the syrup has thickened slightly, strain the mixture through a fine sieve into a bowl, pressing gently to extract all the juice. Discard the solids and let the syrup cool completely.
  4. Refrigerate the cooled cranberry syrup for at least 2 hours or overnight, so it’s thoroughly chilled and ready to use.
  5. Pour the chilled cranberry syrup into each glass, filling about halfway, then add ice if desired for extra chill.
  6. Slowly top each glass with chilled sparkling wine, pouring gently at an angle to keep the bubbles lively and prevent overflow.
  7. Garnish each drink with a few fresh cranberries, a twist of lemon, or a sprig of mint for visual sparkle and aroma.
