Ingredients
  

  • 2 cups frozen pineapple chunks preferably ripe and sweet
  • 1/4 cup fresh mint leaves for cooling flavor
  • 2 tablespoons lime juice brightens the flavor
  • 1-2 tablespoons honey adjust sweetness as needed
  • 1/4 cup coconut water optional for extra tropical flavor

  • Silicone molds or plastic cups

Method
 

  1. Place the frozen pineapple chunks, fresh mint leaves, lime juice, honey, and coconut water into the blender.
  2. Blend on high until the mixture is smooth, bright in color, and slightly frothy, about 30-45 seconds.
  3. Taste the mixture and add more honey or lime juice if desired, blending again briefly to combine.
  4. Pour the vibrant mixture into silicone molds or plastic cups, filling them almost to the top.
  5. If using cups, insert sticks into the center of each and secure with foil if needed.
  6. Place the molds or cups flat in the freezer and freeze for at least 4 hours, preferably overnight, until completely solid.
  7. To serve, briefly run warm water over the outside of each mold or cup to loosen the pops.
  8. Gently pull the pops out and enjoy immediately, savoring the icy burst of tropical and herbal flavors.

Notes

For an extra creamy version, substitute coconut water with coconut milk. You can also experiment with other herbs like basil or cilantro for unique twists.
